DESCRIPTION:Lebanon’s most prominent food activist and the founding-father of Lebanon’s first farmers market ‘Souk el Tayeb’\, Kamal Mouzawak has been recipient to accolades such as Prince Klaus Laureate 2016 and Foodics Icon Award for Middle East & North Africa’s 50 Best Restaurants 2022. The culinary changemaker grew up in the gardens and kitchens of Lebanon\, tasting life\, food and land fruits at their source before creating Beirut’s first farmers’ market\, Souk El Tayeb (2004) which works to preserve food traditions and the culture of sustainable agriculture in Lebanon. Over the last twenty years\, Souk El Tayeb has evolved from a weekly farmers’ market into the creation of ‘Tawlet’\, kitchen style restaurant in Beirut as well as throughout Lebanon and most recently in Paris. Tawlet\, a network of Farmers’ Kitchens where cooks tell their stories and traditions through authentic home cooking is designed to showcase the richness and diversity of Lebanon’s regional culinary traditions\, promoting local ingredients while encouraging cooks to rediscover old recipes. Kamal’s mission has been clear to him since the beginning. “I was always anxious to do something to change the world”\, he says\, “I follow what Gandhi said: Be the change you want to see”. \nKamal will be joined by Tara Habis\, Beirut born architect who followed her dream to become a pastry chef\, graduating from the worldy renowned École Ducasse – Paris. Tara currently heads the kitchen of Tawlet Restaurant in Paris. \nThe discussion will be moderated by Gamze Ineceli.

DESCRIPTION:We talk a lot about what we eat\, but quite a bit less about how we eat it. The earliest manuals about Table manners\, that is compendiums of rules\, date back to the 13th century\, in Germany\, and amongst the meals at the Symposium that evoked the strongest reactions was one with tableware or cutlery\, to be eaten using your hands. For some at the table\, that was inacceptable\, against the rules. \nBreaking the rules\, as we know\, is important though\, to stay alert to what and why some of us take for granted. Amsterdam-based design duo Jouw Winjsma and Martin Kullick have a background in clothing and jewelry\, but soon drifted to food. In 2009 they founded Steinbeisser\, a Gastronomy Initiative. Cooperating with top chefs and artists\, they host elaborate meals with accoutrements that break many rules\, and have won accolades from many important publications and institutions. \nThe discussion will be moderated by Ursula Heinzelmann.

DESCRIPTION:Micha Schäfer was studying theology at university when he realised that what he really wanted to do was cook. Finding his way into the kitchen through dish-washing\, since 2015\, he has been wielding the big spoon at restaurateur’s Billy Wagner’s Nobelhart & Schmutzig in Berlin. In addition to their philosophy of hyperlocality\, the dishes are minimalistic\, searching for a purity that gently but persistently nudges you to reflect on the origins of what you are being presented with. “Cooking is only interesting when you start thinking and creating — through restrictions\,” explains Micha. “That’s why the ‘brutal lokal\,’ vocally local approach makes sense to me. But that’s also how I eat myself; I like things on their own\, quite bare. I am not trying to rebel against anything or anyone; my food is the reflection of who I am right now. I put a strong priority on innovation\, not least in my ability to evoke a true sense of place\, and thus send our guests on an emotional journey through taste.” \nThe discussion will be moderated by Gamze Ineceli.

DESCRIPTION:Writer\, cookery teacher and demonstrator of Persian-Azeri cuisine\, Dr. Simi Rezai Ghassemi was born in Iran and raised in Anglesey\, North Wales. For the last fourteen years she has been hosting supper clubs and teaching cooking classes with an emphasis on the cooking of the ‘Silk Route’ in Simi’s Kitchen in Bath. Her lunch on Saturday was an edible demonstration of “Food Rituals in Iran: Nazr\, Nowruz\, Aza”. \nNAZR\, the tradition of sharing ‘Osh’\, (a rich pottage) to give thanks for your prayers being answered (perhaps for the recovery from illness of a child or some other important event that affects an individual household). \nNOWRUZ\, the preparation of the quintessential picnic dish ‘Kookoo Sabzi’\, (an herb frittata) to celebrate the thirteenth day of the New Year. \nAZA\, coming together to share the contemplative\, patient process of making Halva’ (buttery toasted flour bites) for the soul of the deceased. \nThe discussion will be moderated by Gamze Ineceli.
